EVANS & TATE REDBROOK RESERVE SHIRAZ, all grapes are hand-picked throughout the cool of the early morning, a choice parcel is included as whole bunches. The musts are transferred to a small fermenter and cold-soaked at 5°C for several days, followed by ten days of ferment at 22°C to 24°C. Juices are rack and returned over the cap for the gentle extraction of colour and tannin. Upon completion, batches are gently pressed and pressings returned to the free runs, adding structure and style to the finished wine. Components are matured a year or more in a combination of seasoned and new French oak puncheons, hogsheads and barriques. Every batch represents an individual vineyard block and is kept separate until final assemblage.
